The following morning, workers open the capped female flower, peel back the petals of the male flower, and gently rub the anther surface onto the three-lobed stigma. The crossed flower is re-capped to prevent pollinator visits and tagged with the crossing date. Fruits mature in 40-50 days until skins turn golden brown.
